We enjoyed a couple of ‘bring a plate’ family lunches over the long Easter weekend. I love these type of occasions, getting together with family. There is something so special about them. It is so lovely to see the kidlets happily playing and adults enjoying adult conversation over a cold beverage or cuppa (whatever takes your fancy). I also love that these occasions give me an excuse to try out new recipes and whip out some old faithful’s as well. Lately I have been trying my hand a reinventing the good old ‘cheese muffin’. Don’t get me wrong I love the ‘cheese muffin’ and they are perfect for the above said kidlets. But I have been wanting to try our some more grown up flavour combinations and this one here along with the Roasted Capsicum and Brie ones I also made on the weekend hit the nail on the head.

I love how the spiciness of the salami, earthiness of the pesto and yummy mozzarella compliment each other, with neither one over powering. The flavour combination definitely ticking the boxes of revamping the old ‘cheese muffin’ and grown up flavours.  These muffins were a hit in my books, just ask my guinea pigs (family) or you can try them out for yourself and let me know what you think.

Salami, Pesto & Mozzarella Muffins

Ingredients
  1. 2 cups self raising flour
  2. 2/3 cup milk
  3. 125 grams butter, melted
  4. 1 egg, lightly beaten
  5. 100 grams salami, diced
  6. 1/2 cup parmesan cheese, grated
  7. 1/2 - 1 teaspoon chilli flakes (depending on your taste)
  8. 1/4 cup prepared pesto
  9. 1/4 - 1/2 cup mozzarella cheese
Instructions
  1. Preheat oven to 180 degrees Celsius. Lightly grease or line a 12 hole muffin pan
  2. In a large bowl sift flour. Stir in salami, parmesan and chilli flakes
  3. In a small bowl or jug, mix together milk, butter and egg. Season with salt and pepper to taste
  4. Make a well in the centre of the dry ingredients. Add milk mixture. Mix until just combined
  5. Half fill each muffin tin. Top with 1 teaspoon of each pesto and mozzarella and cover with remaining batter
  6. Sprinkle with remaining mozzarella and bake for 20- 25 minutes until golden to top and cooked through

  1. **Serve warm with butter

    Yum. These are right up my alley. Roasted capsicum and brie sounds yummy too. Going with what’s in my fridge at the moment, I’d also try sun-dried tomatoes and havarti.
