The last month as been a pretty busy one for the Ritchie household with birthdays, fathers day, a hens party and wedding etc… This has meant there has been a need for lots of quick, easy on the table in half an hour dinners that we can all (including Sebastian) eat. So I have been scouring my recipe files for dinners that fit that criteria. This one strangely enough is off the back of the puff pastry packet (I had bought it for a different purpose) however, it was a welcome surprise. It is also perfect for this time of year – not too heavy. Served with some salad greens dressed in a little olive oil with a squeeze of lemon juice, a sprinkle of salt and pepper and some shaved parmesan – delish!!!!
Now, as good as the idea of rolling these bad boys up sounded, for the life of me it would not work. Maybe I over stuffed them – I like Bolognese or maybe.. I just don’t know. So mine ended up looking like Bolognese wraps or parcels. It didn’t effect the taste though.
Bolognese Pinwheels – Recipe
2 sheets flaky puff pastry, thawed 500g thick cooled Bolognese sauce (recipe included below) 50g baby spinach leaves 50g parmesan cheese, grated 1 egg (for glazing) Hint: a thick Bolognese sauce is needed for this recipe. Either use the one below or simmer your own version until thick, cool Bolognese Sauce: Heat 1tablespoon oil in a frying pan, add 1 chopped onion and 1 clove garlic, cook for 1 minute. Add 500g lean minced beef, stir fry until meat changes colour. Add 4 tablespoons tomato paste, 1 teaspoon Italian herbs and cook for a further 10 minutes. Cool!!!! Note: This sauce can be made ahead of time and kept in freezer until needed. Preheat oven to 220 degrees Celsius or 200 degrees fan bake Place pastry sheets on baking paper. Spread half the Bolognese sauce over each pastry sheet, leaving a 2cm boarder at the top Layer half the spinach and cheese over the Bolognese Using the baking paper to assist, roll up each sheet like a swiss roll. Glaze with egg wash Place rolls on lightly greased oven tray, bake for 20 minutes or until golden Enjoy!I would love to hear what some of your favourite quick easy go to dinners are…

You can never go wrong with bolognese, and you’ve just taken it to a whole new level of deliciousness by adding baby spinach, cheese and encasing it in PASTRY! Amazing.
