Now if you are more of a chocolate or caramel kind of guy or girl this recipe may not sound like it will tickle your taste buds. I should know as I more of the chocolate sort myself but it actually was. A lovely crispy buttery biscuit base filled with smooth strawberry ice cream topped with sweet sparkling wine soaked strawberries, delicious! Maybe it was the wine soaked strawberries that got me? Anyway, it was the perfect dessert for the Dads in my life this Fathers Day just gone, plus it was the best excuse to try out another recipe. An added bonus – they both have a bit of a sweet tooth and fans of strawberry.
This dessert would be just perfect for a lovely Summers evening (once it cools slightly) as it starts melting as soon as you bring it out of the freezer even Spring (hence the slightly melted photos) – you had to be quick! The best part is this recipe can be easily adapted – try your favourite ice cream or frozen yoghurt flavour, not too sure how orange chocolate chip would go though (then again – I’m game if you are).

Strawberry Ice Cream Tart – Recipe
200g plain sweet biscuits 80g butter, melted 1 litre strawberry ice cream 1/2 cup sweet sparkling wine 1/2 cup caster sugar 250g strawberries, hulled and halved 1 vanilla bean, split and seeds scraped Place biscuits and butter in a food processor and blend until fine crumbs form. Use the back of a spoon to gently press the biscuit mix into the base of 1 large 20cm greased loose bottom tart tin or 4 smaller 8cm tins. Refrigerate for 1 hour Place the ice cream in a bowl and using electric mixer beat until softened. Spoon into tart shells and freeze for 2 hours until set Place wine and sugar in a bowl, mixing until sugar is dissolved. Add the strawberries and vanilla seed. Set aside and marinate for 30 minutes Remove the tart/s from the tin before serving and topped with wine soaked strawberries.
