Roast Cherry Tomato & Spicy Chprizo Pasta

Both Steve and I are huge fans Italian food especially pasta. After a cooking class on our second trip to Italy a couple of years ago we even came home and bought a pasta machine so we could make our own fresh yummy pasta. Truth be told that is still yet to happen, but that doesn’t stop us from enjoying big bowls of the ready made stuff. This recipe came about one Summer night when we felt like salad and pasta so I came up with this version of a summery pasta – its perfect served straight away or even cold the next day (I always tend to make more than required and its the perfect lunch!)

Roast Cherry Tomato & Spicy Chprizo Pasta

Roast Cherry Tomato & Spicy Chorizo Pasta – Recipe

400g dried pasta (whichever you prefer, me I like the small shells)

1 punnet cherry tomatoes

Olive oil – to drizzle

Balsamic Vinegar – to serve

1 clove garlic

salt and pepper – to taste

handful of fresh basil leaves

2 spicy chorizo sausages – sliced

50g black olives – halved

Parmesan – to serve

Preheat oven to 200 degrees Celsius.

Bring a large pot of water to the boil, season with a good pinch of salt. Add pasta, cover and bring back to the boil. Remove lid and cook pasta until al dente

While pasta is cooking, cut cherry tomatoes in half. Place on a roasting tray with a good drizzle of olive oil, finely chopped clove of garlic, salt, pepper and chopped basil. Gently toss to coat. Roast in oven for 15 minutes or until tomatoes are softened and slightly caramelised

Drain pasta well. Add tomatoes, sliced chorizo and halved olives. Toss well to combine. Add a dash or balsamic, and a little more olive oil and salt and pepper if required. Serve and top with parmesan

Enjoy!

    I love pasta and chorizo so this dish sounds perfect to me! I’d love to do a cooking class in Italy one day, my hubby and I did one in Vietnam and it was a lot of fun.It would great to learn to make my own pasta (even if like you I’d probably still buy the ready made stuff 😉
