Upside-down Plum Cake Happy Friday Everyone!

As you all know the last month has been a bit of a blur on the blogging front, truth be told as I was putting all my extra time, efforts and energy into the revamp of this little space. Now I know I have said it before and I am bound to say it again but I love how it has turned out and I am so excited to be getting back into the swing of things. 

Now a couple of weeks ago I was given a bag of plums from my Mother in Law. After eating some straight from the bag all juicy and still warm from the afternoon sun; stewing about half of the remaining ones – because they are delicious on top of yoghurt and the little mister loved them with breakfast (although a bit messier than the usual stewed apple); I wanted to try something different and as I am never one to shy away from cake I thought I could use them to make a lovely version of this upside-down cake. I actually made two of these upside-down plum cakes as we had so many plums. Don’t worry we didn’t eat them both ourselves, we shared them, although neither lasted very long.

So after revamping my our home office, I thought it was time to share a tasty treat with you all and what better way to start than with yummy, toddler approved cake… This cake is so quick and easy  to put together. The sweetness of the cake perfectly balances out the tartness of the plums and when served with cream or ice cream is – perfect! I’m thinking peaches could also work quite well, I have a tin of those on hand in the pantry and I am thinking that perhaps this could be the perfect addition to our weekend, Steve is away on Sunday doing photography but I am sure a wedge of this wouldn’t go a miss.

Upside-down Plum Cake

Serves 6
Delicious served cooled with cream, or alternatively serve warm with cream or ice cream as a pudding.

Ingredients
  1. 125 grams butter
  2. 1/2 cup sugar
  3. 2 eggs
  4. 1 cup plain flour
  5. 2 teaspoons baking powder
  6. 2 Tablespoons milk
  7. 25 grams melted butter
  8. 1/4 cup brown sugar
  9. 1 teaspoon mixed spice
  10. approx. 8 plums, pitted and quartered (depending on size)
Instructions
  1. Preheat oven to 180 degrees Celsius and grease a 20cm round tin.
  2. Cream first portion of butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition
  3. Sift flour and baking powder, folding into the above mixture. Stir in milk
  4. Combine second portion of butter and sugar with mixed spice. Spread over the bottom of the tin
  5. Arrange plum cut side down. Spoon cake batter over the fruit. Bake for 40 minutes or until cake springs back when touched
  6. Enjoy either hot or cold with cream (or even ice cream)
Notes
  1. Tinned fruit such as pears or pineapple would also work well with this recipe. It's time to get creative with what's in the pantry!

    Lydia your new look here is gorgeous, well done!
    This upside-down plum cake of yours looks absolutely delicious! I can just imagine what your little cutie pies face must look when he finishes a slice. Love that it can be adapted to other fruits too.
    Mmmmm my favourite cake would be any cake that is homemade, I couldn’t possibly narrow it down any more than that as long as it’s not banana cake (we don’t go well together).
