Roasted Strawberries

I tried Roasted Strawberries for the very first time a few Summer’s ago, when a  family friend mentioned how good they were. At the time we were on a picnic and a lot of the conversation went on around why would you roast them when they are just so yummy and delicious fresh. Now in the past I would probably have felt the same way… except in the peak of the season, strawberries are four punnets for $5 and I am the only one in our household who eats them (Sebastian has one or two a day, not enough to make a dent in four punnets). So, I was really excited to have stumbled across a way to make them last without going to waste, because I LOVE strawberries!

I will apologise now because it is actually the end of strawberry season now and so many of you will have to wait a whole year to try this out but I just HAD to share. They are divine. A combination of juicy and sweet with a little bit of tartness. And go perfectly with everything from yoghurt, ice cream, waffles, hot cakes, on its own (you could seriously just eat it straight from the jar with a spoon) and would be the perfect accompaniment to any dessert. They could be added to crumbles, used as a topping in slices and brownies, even use them instead of raspberries in this Shortbread Recipe. Roasted Strawberries are even a great way to use up strawberries which are just slightly past their best.

Ingredients
  1. 4 punnets Strawberries
  2. 1/4 cup Sugar
Instructions
  1. Preheat oven to 180 degrees Celsius and line baking tray with greaseproof paper
  2. Wash strawberries, remove stalks and cut in half (quarters if they are extra large), spreading in a single layer
  3. Sprinkle with sugar, and toss to coat gently
  4. Bake for 18 - 20 minutes - strawberries will darken in colour and starting bursting with delicious syrup
  5. Cool before transferring to a jar (don't forget all the syrup) and keeping in the fridge or...
  6. Serve straight away with ice cream (my favourite)
Notes
  1. 4 punnets worth makes around a cup of Roasted Strawberries
  2. In our household 4 punnets worth goes in no time at all; even hubby who isn't a huge fan of strawberries loves the stuff!

So what are you having for dessert tonight?!? Roasted Strawberries by chance! Guess what.. I have one sneaky jar of this delicious topping left and will be using it for breakfast tomorrow morning on top of hot cakes drizzled with Nutella – yum!!!

Note: You will never, I repeat never want to by Strawberry topping from the supermarket again. This is by far the yummiest and easiest recipe I have made in a looong time.

    I have never heard of this and it sounds amazing! I would definitely use these on everything from pancakes to oatmeal, to ice cream and cupcakes!

    Hello! This sounds yum! do you think it would work if I cooked it in a pan?

    P.S. I too have a little boy called Seb and he also has curly hair and my hubby is also called Steve! haha

      I am sure it would work in a pan, would just have to keep an eye on it as timing may be a bit different.

    I’ve never roasted them but I do cook them once they’re a little past their best. How long do these last in the fridge?
