Now, Christmas isn’t Christmas in our household, if I haven’t whipped up a packet or two of these Mini Chocolate Christmas Puddings. I first made them many years ago with my Mum and well, have been making them every Christmas since then! They are the ultimate crowd pleaser, I have yet to meet a child, parent or grandparent who doesn’t like them.
These Mini Chocolate Christmas Puddings are super cute, fun, easy to make and a MUST on my Christmas baking list every year. They are one of those recipes you can whip up at the beginning of the festive season and just have on hand for when you need them, you know those bring a plate occasions that just seem to pop up at this time of year. And with only four ingredients required, they make the ‘best’ gifts for teachers, friends and neighbours. I mean, seriously, who wouldn’t love to get a plate of these babies delivered to their door step?
I love how they are easy enough they get everyone involved, everyone wants a hand at making and eating them. I even had Sebastian giving a helping hand with the quality control side of things this year. Note to self: next year get more (lots more) spearmint leaves and jaffas; some of our puddings this year are looking a little naked…
- 1 packet Mallowpuffs (or similar type biscuit)
- 100 grams white cooking chocolate
- 10 spearmint leaves, cut in half lengthwise
- 10 Jaffas (or red pebbles / m & m's)
- Start by melting the white chocolate. I find it easiest to do in the microwave in bursts of 30 seconds mixing in between to ensure the chocolate doesn't burn
- Take a Mallowpuff, swirl upside down in the chocolate to get a nice even coating
- Top with a Jaffa and two spearmint pieces either side
- Note: I have used green jelly snakes instead of the spearmint leaves if your not able to find them - you just need to get creative with cutting them
