This recipe was given to me a couple of weeks before Steve and I got married from his Mum. The envelope was labelled ‘Some of Steve’s Favourites’ and inside was a collection of Steve favourite recipes lovingly handwritten out. I have treasured these recipes and have added them to my collection, looking forward to the day I would try them out.
The other week when I found myself with a surplus of lemons I figured it was high time I put one of these said recipes into practice. I was excited to try something that I knew hubby would LOVE and that I had been given handed down to me. In my opinion the fastest way to make someone feel a part of the family is to intrust them with a favourite recipe, especially when said person LOVES the kitchen, cooking and baking.
This recipe is lovely the perfect amount of tangy lemon, matched with coconut and topped with light lemon icing. Of course you can make this recipe as lemony as you wish, making it fabulous for all the different taste buds.
Lemon Coconut Slice – Recipe
250g Arrowroot biscuits (approx. 1 packet) 1/2 cup sweetened condensed milk 125 grams butter 1 tablespoon grated lemon rind 1 cup coconut Place condensed milk and butter in a large jug, microwave till melted. Mix well Crush biscuits finely, add lemon rind and coconut. Mix well into warm milk / butter mixture Press mixture into greased 28cm x18cm tin. Refrigerate for 1 hour Ice with lemon icing (below), sprinkle with coconut. Once icing has set – cut into fingers Lemon Icing Mix the following all together – 1 1/2 cups icing sugar; 3 tablespoons lemon juice and 15 grams melted butter
Oh my goodness, this sounds and looks so fabulous. I just love coconut… but with lemon?! YUM!

Oh yum, I love the old recipes, they are straight forward no fussing about & truly morish… I have a bag of lemons thanks to my FIL think I’ll have to give this one a whirl for sure!
